The Sott'oli product line


Our olive oil product line is made strictly with seasonal vegetables of mainly local origin, always freshly processed and preserved in 100% Italian extra virgin olive oil, without the use of preservatives and colorings.

The recipes are the simple and genuine ones of the Molise housewife tradition, prepared with methods and according to the classic tastes of the culinary culture of Molise, combining modern and innovative manufacturing processes in order to guarantee absolute safety from a food point of view.

Red Peppers min. 60%, vinegar, extra virgin olive oil (100% Italian), sugar, salt natural flavours ..

Appetising recipe typical of the Molise tradition, made from freshly harvested red peppers. Only fresh seasonal vegetables of the first class are processed, with all cores and bright fibers from inside the peppers being carefully removed. This results in a distinctive product that combines all the good qualities of fresh, high-quality vegetables: the narrow shape of the peppers, their dense, full-bodied taste, crisp texture and good digestibility.

Excellent as a side dish to meat or fish dishes. But also ideal for serving appetizers of all kinds, whether together with salami or cheese, toasted bread or to the various appetizers. Also for refining potato salads or simply together with sandwiches, flatbread, savory biscuits or spicy pasta.

The aubergines in olive oil are born from a classic homemade Molise recipe, made with fresh seasonal vegetables of the highest quality, selected and rigorously handmade in thin strips.
A special processing procedure eliminates the seeds and the typical amarotic and woody component, guaranteeing a simple, genuine and crunchy taste.

Suggested
As an appetizer or as an accompaniment to main courses, to refining salads, to roasted bread slices or to salami or cheese.

Fantasie aus Zucchini

Fantasy made from zucchini
Zucchini, 100% Italian extra virgin olive oil, white wine vinegar, carrots, tropea onions, salt, natural flavors (mint, oregano, parsley).

Imaginative recipe born from the combination of fresh vegetables cut by hand into thin strips, with zucchini as a basic ingredient.
The final result is a delicious mix of colors and smells, light, refined and crunchy, also suitable for the most delicate palates thanks to the use of highly digestible vegetables such as carrots and courgettes, sweetened by the unmistakable taste of Tropea baby onions.

Zucchini

Simple and light recipe, a reminder of the traditional flavors of the tables of the past, made with very fresh Zucchini of excellent quality, processed fresh and immediately after harvest.
Single sweet taste, crunchy and very fragrant due to the presence of mountain oregano and mint as natural aromas.

The simple taste, the intense scent and the crisp consistency of the courgettes, together with the pure, virgin olive oil that serves to preserve it, make it a perfect product to enjoy on a good home-made bread or farmhouse bread, or but also to warm bread cuts like bruschetta. Artichokes (min. 65%), 100% Italian extra virgin olive oil, white wine vinegar, white wine, lemon, salt.

Seasonal recipe, typical of the spring period when nature offers the tenderest and sweetest artichokes, particularly suitable to be preserved in oil.
Product with a fresh taste, thanks to the use of lemon in its preparation as the only preservative and natural aroma, also able to contrast the characteristic bitter taste of artichokes, to enhance its whitish color and its authentic and genuine taste.

Whole or sliced artichokes in oil, adapt to every use. They attract the eye and the palate both as an appetizer and as a side dish for meat or fish dishes.

Eingelegte Kleine Champignons

Funghi Champignons Sott'olio
Champignon mushrooms (min. 65%), 100% Italian extra virgin olive oil, white wine vinegar, salt, lemon.

Recipe based on the best quality mushrooms, small tender and delicate, always available during the year but strictly selected in the type in order to guarantee the product a crunchy consistency and an intact aspect.
The amber color of the mushrooms in oil reflects the absolutely natural preservation procedure in extra virgin olive oil: lightly blanched in white wine vinegar, they are treated only with lemon, without the addition of preservatives or other bleaching chemical compounds.

Seasonal winter recipe, made with whole, very fresh, processed mushrooms immediately after harvest to prevent them from losing their characteristic aroma and freshness.
They appear intact and whitish in appearance, firm, full-bodied and crunchy. The taste is authentic and true of a quality of mushrooms that is generally very appreciated and sought after.
